Although watermelon is a tasty and delicious fruit, we find that after being immersed in syrup for a few days, the texture of the watermelon deteriorates. For this reason, we minimize the amount of watermelon in our products. As a matter of fact, a large portion of our fruit salads are ordered "no watermellon", with the end user adding fresh watermelon sections prior to serving.
